Well, I was going to be good and bake a little brownie recipe that only serves 2 people. But then I decided that I wanted leftovers (hee hee). And I couldn't find a recipe to fit my 9-inch-square pan, and I didn't feel like doing math out the wazoo, so I just borrowed my friend's 9-by-13-inch pan. So oh boy, there are certainly leftovers . But oh so good...
Antidepressant Brownies
3/4 cup (175 mL) unsweetened cocoa powder 1/2 teaspoon (2 mL) baking soda 1/3 cup (75 mL) EACH oil and applesauce 1/2 cup (125 mL) boiling water 2 cups (500 mL) sugar 4 egg whites 1 1/3 cups (325 mL) flour 1 teaspoon (5 mL) vanilla
Preheat the oven to 350 degrees F (180 degrees C).
Grease a 9-by-13-inch (22-by-33-cm) baking pan.
In a large bowl, stir together the cocoa and baking soda. Blend in the oil, and mix until smooth. Pour in the boiling water, sitrring until the mixture thickens. Now stir in the applesauce, the sugar, and the egg whites. Mix until smooth.
Add the flour and the vanilla. Blend completely--there should be no lumps. Now pour into the greased baking pan. Spread the batter evenly to avoid crispy edges.
Bake for 35 to 40 minutes (mine were done in 25, but I used a glass dish), until just set in the middle.
Let cool and cut into squares.
Makes about 20 brownies (I cut them into 24). --adapted from _Clueless in the Kitchen_
