Heather's Zucchini bread..need some help please       03/17/04 08:51 AM Edit Reply Quote Roz Reged: 02/29/04 Posts: 35 Loc: New York Hi all, I want to make the zucchini bread but have a few questions: 1. About how many zucchini should I buy for the 2 loaves? 2. Can I use egg beaters or liquid whites as I hate to waste all the yolks if I use real eggs...do the egg whites have to have the consistency of meringue as I don't think these packaged substitutes can do that 3. Finally, aren't the skin and seeds of zucchini insoluble fiber and therefore not soothing to IBS tummies? Thanks so much for your help.
