I've never tried it without the chocolate, but I don't see why it wouldn't work. I'd say give it a try! I'd love to hear how it comes out. If it doesn't work I know Mori Nu (the tofu company) makes little packets called "Mori Mates" (or something like that) that you add along with one box of their tofu to make pudding.
