As for that casserole, you seem to know that you can sub ground turkey or soy crumbles for the beef, soy or rice milk for the milk, and soy cheese for the cheese. Campbell's tomato soup has HFCS in it, which is a problem for many people, so you might want to sub an organic tomato soup instead... Imagine Foods makes a great creamy tomoato soup! They also make a mushroom soup, which you could sub for the cream of mushroom. Otherwise you could make your own dry cream soup mix and use that instead. The ketchup should be fine, but what is rotel? I've never heard of that!
Let's look at that Lo Mein recipe. That one looks like it should be okay as long as you use boneless skinless chicken breasts, the veggies are very well cooked, and you eat it with a good soluble fiber base. Onion, garlic, bean sprouts, and broccoli are all problematic for some people because they're very high in insoluble fiber, so I would use those ingredients sparingly and make up for it with extra chicken. I bet this would be great served over white rice, which is a great way to get in that soluble fiber.
