If some of you aren't familiar with the fava bean here is a little info:

Quote:

Fava beans (broad beans): Dried favas look like large lima beans; they have a mealy, granular texture and an assertive, slightly bitter flavor. Their thick skins need to be peeled before eating. Fava beans are sometimes available skinned and split. Popular in Italian, Greek, and other Mediterranean cuisines, they combine well with pungent herbs and other strong-flavored ingredients.

From what I can tell, they rank highest of all beans on the Glycemic Index, at a whooping 79. White rice is around 88. The high index rating tells me that once they are peeled and cooked well they may be the highest of all in the varieties in soluble fiber but I can't say for sure.

I tried them once, a long while back (pre-IBS), and didn't care for them. Now on IBS, if the piano leg was a safe food I'd eat it.

Think I'll give the lowly fava a second try.
