This DOES sound wonderful, and when some motivation gets behind me I hope to make it. (Being Irish, I've never met a potato I didn't like.)
You know, I wonder if there might be a safe cream based sauce that would work well, using soy/rice/oat milk and lots of herbs. It sure would add lots of flavor. What do you think?
I haven't looked yet, but SharonMello, who was the queen of the recipe boards at one time, posted a lot of Weight Watchers, IBS safe recipes. As I recall she's Jewish. Wonder if she had any for some Jewish dishes that would be tasty. (Not the same as the originals, I'm sure, but at least a suitable substitute.)
