I'm on the IBS and Gluten-free diet and I've been trying out some dessert recipes all weekend. Today I decided to try making chocolate meringue cookies myself after finding them in my local health food store. I just tried one and they are DELICIOUS!!!!! (especially if you're a chocolate lover like me) Here's the recipe: 4 egg whites 1 cup sugar 1/2 tsp. salt 1-1 1/2 tbsp. vanilla (depending on how sweet you want them) 1 cup non-dairy cocoa powder Set oven to 350 degrees First, separate egg whites from yolks and with and electric mixer, whip them in a large bowl until very frothy, then, add the cup of sugar, vanilla, and salt and mix until there are no dry ingredients stuck to the side of the bowl. Then, start whipping again. Next, add cocoa and whip until all ingredients are blended evenly and mixture resembles chocolate. Then , spray a cookie sheet with cooking spray and drop scoopfuls of mixture onto the sheet (approx. 1 inch apart) Place in oven for about 10 minutes and let cool for about 20 minutes. If you haven't used all of the mixture, it makes a great pudding! I like to use it as a dip for bananas. mmm mmm GOOD!!!
