This was on the Newsletter that came with our monthly statement from our gym and claims to be "healthy and packed with flavor." I don't care for mashed potatoes, but if I did I think I'd like this recipe. It calls for buttermilk*, so we need to do a substitution. (Heather - vinegar + soy milk?)
6 lg. peeled Idaho potatoes (approx. 6 cups) 10 garlic cloves 1 bay leaf 1 teaspoon salt 1/4 cup to 1 cup buttermilk * Salt and pepper to taste
In lg. pot, combine the potatoes, garlic cloves, bay leaf and salt with just enough water to cover. Cover the pot, bring to a boil, then lower the heat and simmer for 15-20 minutes, or until the potatoes are tender. Drain. Discard the bay leaf. Using a potato masher, mash the potatoes and garlic with enough buttermilk* to achieve a smooth consistency. Add salt and pepper to taste.
Servings: 6 Per serving: Calories: 170 Fat: 9 grams Sodium: 170 mg. Cholesterol: 1 mg.
