Yeast free bread

I've had some trouble with yeast, so I searched for and found this recipe of yeast free bread that I have been making with great success. Yeast free bread tends to be clumpy and not rise, but I found this to be as good as yeast bread, and it is quick and easy to make! This is a country style bread and should be sliced thick.
Ingredients: 3 cups flour 4 tsp baking powder 1 tsp salt 1 1/2 cup rice milk or water (works with any liquid) 1/4 cup apple sauce (I've both used storebought, and homemade and both are equally good. Original recipe says oil, but I replaced it with applesauce).
Directions: Mix dry ingredients, then mix liquids and add to dry. Stir until there is no more dry flour. This is usually pretty sticky when I do it, so I often add more flour or even rolled oats. Recipe says dough should be moist but not sticky, I've never gotten there! Shape into a ball or an oval, with oiled hands (suppose flour works too). Score lightly the surface in a diamond or an x to prevent splitting of the crust. Place on clean baking sheet and bake for 40 min. at 400F (200°C). Seeing as this dough is pretty sticky when I make it, I pour it into a baking pan and bake as directed, or until baked through.
Variations is to sprinkle sea salt and oregano for a foccacia flavor. Liquid can also be replaced with tomato juice and chopped tomatoes can be added. I've also added herbs and spices to the dough for a garlicky bread with soup.
