One of my local grocery stores sells crumb-crusted tilapia fillets. I don't know what's in the crumb crusting - it looks like toasted Panko breadcrumbs - but it's never bothered my tummy. I put together a meal for two people this way:
Pre-heat oven to 375.
Potatoes go first: For 2 people, 12 ounces of new potatoes, halved or quartered if large. Toss with 1/2 Tablespoon of olive oil, 1/2 Tablespoon of dried oregano, salt and pepper. Spread on a cookie sheet and bake for 30-40 minutes.
Then fish: Pam or lightly oil/grease a large Corning dish or something similar. Place the tilapia fillets in the dish. After the potatoes have been in the oven for about 5 minutes, put the tilapia in the oven, covered. After 15 minutes, remove the cover and cook for another 15 minutes.
I usually serve this with Roasted Asparagus (from Barefoot Contessa):
Snap off the woody ends of a bunch of asparagus. Rinse and pat dry. Put the asparagus on a cookie sheet. Toss with a little olive oil - try a teaspoon to start, it doesn't take much to coat the asparagus. Sprinkle generously with salt and pepper.
Once the fish has been in the oven for about 5 minutes, put the asparagus in and cook for 25 minutes.
Not only is this meal delicious, there's no last minute prep-work. Everything cooks together and is all done at the same time.
Sadly, it's not really a good idea on a very hot day.
Enjoy.
