You will be amazed what black bananas can do for a banana bread recipe. The 'Nut Tree Restaurant and Gift Shop' in the Fairfield /Vacaville area of California used nothing but absolutely black mushy bananas in their breads, breads that people would drive miles and miles to purchase made with various nuts for variety. Baked banana bread freezes well too.
Let your bananas get totally black and mushy right inside the skin. If you aren't going to make bread right away, then remove the 'black mush' from inside the banana peel and store this black mess in your freezer in a zipper type freezer bag until you are ready to bake banana bread. Let the 'goo' defrost and then make your bread. Ripe, mashed bananas will never replicate what black overripe bananas can do as far as flavor and color to this wonderful bread.
Also, you can ask the produce manager where you shop if he has any over-ripe bananas in the back that he has pulled from the produce section. Yes, they do and had planned to write them off and throw them out. You can get these for far less than half the original cost, and sometimes a huge bag for a dollar. Can't beat that! Why pay the price for perfect bananas and then wait for them to turn black and mushy? Don't do it, save your money...
