safe mac and cheese for your kiddies

i eat this stuff all the time. i grew up on mac and cheese and missed it terribly when i was diagnosed. it's not a precise recipe, but you'll find that everyone likes theirs differently from the next, fix it to suite your tastes. 1/2 box of creamette small shells pasta (it'll make one heaping bowl) package of soy american cheese slices (or cheddar, mozzarella, etc) a carton of plain soy milk on hand
while pasta is cooking, in a bowl tear up some pieces of soy cheese and add some soy milk, pop in microwave for about a minute until all melty and cheese starts to bubble. stir, taste, check consistency. too thin, add more cheese, too thick, add more milk. not enough? add more of both. once you have your cheese just the way you like it, add the cooked shells and stir, covering them with the cheese sauce. yum, very tasty. flavor it how you usually would, my mom always sprinkled salt and pepper over hers along with some ketchup. i like to add cut up veggie hot dogs to mine. about one chopped up hot dog per bowl i'd recommend.
