This is my first post so hope i go ok.
I got this recipe from the Wholemeal cafe cookbook.
Wayne's green vegetable soup.
1 1/2 cups green split peas (350g) 2 Tbsp olive oil 2 medium onions, chopped 2 cloves garlic, crushed 1 Tbsp ground cumin 1 Tbsp ground coriander 2 carrots, diced 2 potatos, diced 8-10 cups water 2 Tbsp vegetable stock powder 500g spinach or sliverbeet leaves with stems removed 2-3 celery sticks, sliced 2 tsp salt 1 tsp freshly ground pepper optional: 1/2 cup fresh coriander or parsley, chopped
Soak the split peas in cold water for 2 hours. Drain well.
Heat the oil in a large saucepan and add onion and garlic. Cook over a medium heat for 2-3 minutes, the stir in the cumin and coriander and cook for 1 minute.
Place the potatoes, carrots, split peas, water and stock powder in the pan and bring to the boil. Reduce the heat to low and simmer for 40 minutes, stirring occasionally.
Add spinach or sliverbeet, celery, salt and pepper and cook for another 10 minutes ot until the peas are very soft.
Remove from the heat and puree in a food processor (in several batches) or with a blender stick until smooth.
Serve with fresh herbs. Serves 4-6
