You can sub lite coconut milk for other milks in foods that would taste ok like that, and pumpkin bread would be very good. I have a recipe where I use a cake mix, banana and lite coconut milk. It is moist and delicious! I also use lite coconut milk in mashed sweet potatoes and morning rice pudding. It has 3-4 grams of fat per serving -soy milk has an equal amount per serving (serving sizes are different though).
