One of my favorite cookbooks is "Almost Vegetarian" by Diana Shaw - a fantastic low-fat cookbook. Most of the recipes are vegetarian, and those that aren't are easily converted to be so, by substituting tofu for chicken, for example. Many of the recipes do contain dairy, but it's easy enough to just use soy substitutes.

I've liked the Moosewood books in the past, too, but I don't recall off the top of my head if they were low-fat recipes or not.

Once you get the hang of cooking for IBS, you'll find that it's really easy to convert many, if not most, recipes to be safe and still very tasty. I still use my old (unsafe) cookbooks most of the time, modifying the recipes for fat content and trigger foods.
