Any baking or roasting pan should do, as long as it's big enough for the veggies but not too big for your oven. I often use those disposable foil pans you can get at the supermarket. You don't need to use the rack inside of a roaster pan.
To roast vegetables:
Pre-heat the oven to 400 F.
cut vegetables into chunks and put them into a pan.
Add 1-2 tablespoons of olive oil (assuming there's at least 4 servings worth of veggies), or spray with Pam.
sprinkle the veggies with herbs/spices (I like to use herbes de provence, a mediterranean herb blend that you buy pre-mixed)
Stir veggies to evenly distribute the oil and herbs.
Roast in the oven uncovered for about an hour, or until the vegetables are tender. Stir occasionally.

Potatoes, carrots, and onions are a good roasting combination. Peppers and tomatoes are also tasty with potatoes. Zucchini works well, too. Beets would probably be good if you like them. I usually always include potatoes to make sure there's enough SF.
I hope my directions are clear enough - I haven't made roasted veggies in a while.
