A friend's dad just gave us 30lbs (!!!) of tomatoes, a lot of which were green, so I decided to take the opportunity to try something new... "fried" green tomatoes.
Green tomatoes, sliced about 1/4" thick (a little thicker is fine)
Egg sub to equal 1 egg
About 1/2 cup milk sub of choice
About 1 cup flour
About 1 cup seasoned bread crumbs*
Salt, optional
(Sorry the measurements are approximate... this is what I used for 4 medium tomatoes. You might need more flour and bread crumbs.)
Preheat oven to 450 degrees. Spray a large cookie sheet with cooking spray.
Whisk together the egg and milk in a shallow dish. Set the flour and bread crumbs out in individual shallow dishes.
Dip each tomato slice in the egg mixture, then flour, then again in the egg mixture, then in the bread crumbs, coating well all over. Lay them on the prepared cookie sheet in a single layer, not touching. Sprinkle with salt, if desired.
Bake for 20 minutes, turning once halfway through, until tender and browned.
* Before using seasoned bread crumbs, check the ingredients and make sure they're safe. If you can't find a brand that's safe for your tolerances, season up plain bread crumbs generously with herbs and spices to suit your tastes - onion, garlic, parsley, basil, oregano, paprika, celery salt - all of this would be good.
