The Zesty Chicken and Rice Supper is quick, easy, and very good. I can't find a store-bought taco seasoning packet that doesn't contain either dairy or MSG, so...
How To Make a Taco Seasoning Blend
If your recipe calls for taco seasoning and you don't have a package handy, use this easy-to-make substitute.
Difficulty: Easy
Time Required: 5 minutes
Here's How: 1. Spoon 1 tablespoon of minced dried onions in a small bowl or cup. (I didn't have this, so I used a teaspoon of onion powder instead.) 2. Add 2 teaspoons of chili powder. 3. Add 1 1/2 teaspoons of salt. 4. Add 1 teaspoon of garlic powder. 5. Add 1 teaspoon of cornstarch. 6. Add 1 teaspoon of ground cumin. 7. Add 1/2 to 1 teaspoon cayenne pepper or hot paprika. 8. Stir to blend. 9. Makes the equivalent of a 1 1/4-ounce package of taco seasoning mix.
Not just for tacos. You can use taco seasoning to spice up meatloaf, burgers, tomato sauce, casseroles, and dips.

This taco seasoning is very good, but it's too spicy for me. Next time I'll cut down on the chili powder and either cut down on or just eliminate the cayenne pepper.
I added the spices to the cup of water called for in the Zesty Chicken and Rice Supper and shook vigorously to combine. I also used only half a bell pepper (my tummy is not crazy about peppers) and it still tastes good.
Leftovers of the Zesty Chicken and Rice make a nice second meal, reheated and served in warm flour tortillas with guacamole.
(I've never used the soy cheese, but I assume that if you do, you would sprinkle it on at the end, rather than cooking it in the crockpot.)
