*Rofl* That was great imagery Bob, trying to smush a raw carrot. And normally Heather's smushable rule works well for some things, but not all. How about using a meat mallet or sledgehammer to smush it? *giggle* But seriously, try grating the carrot if you're gonna eat it raw? That way you don't lose the nutrients in the skin, but you at least break up the IF better? Beets can probably also be grated? Ya know those salad bars at restaurants - they always seemed to have cold, grated beets. I wonder also, if juicing your veggies would help?? I keep wondering this myself, every time I see those Juicer commercials...
