You could also try a search for "backpacking" and "camping" - make sure it searches all of the message boards, no time limit - because this has definitely come up several times in the past. I'm probably not the person to ask, because when I'm supremely lazy when I camp/hike - being outdoors is a vacation from the constant cooking I normally do. Therefore, I tend to eat bagels with a little peanut butter, turkey jerky, homemade trail mixes made of cereals and dried fruit, and sometimes some fresh fruit, depending on how much of that stuff I want to carry. Oh, and instant oatmeal. That's really about it. LOL
A friend of mine, when I camped with her a few years ago, made a wonderful couscous dish over the campfire. Something like that is ideal because couscous cooks very quickly, and you can carry it in dry (and therefore not so heavy and bulky). I don't have her recipe, unfortunately, but I think Little Minnie suggests a couscous dish in her reply to the person who posted a couple days ago.
