My favorite way to eat hummus is still to just spread it on bread - any bread will do, I never buy pita anymore because it's always so stale when I buy it. I also like it on crackers, and again, any crackers will do.
I also use it as a sandwich spread - I mostly use it with veggie or turkey burgers, but sometimes I just make a sandwich out of hummus, avocado, and bread. TASTY.
If you have a lot of it, you can also freeze it.  For the sake of convenience, I'd put it in smaller containers, that way you won't have to wonder about how to use it all up at once when you thaw it out!
