When are you going? We are going the first weekend in June and I have been thinking about what to cook for a while! Yes you can take cooked and frozen chicken the first day and let it defrost as you hike to camp 1. We are going to do that. After that meals should be built around pouches of tuna, canned salmon or chicken, turkey pepperoni or jerky. Backpacker magazine has ideas. Couscous is the fastest to cook along with instant rice and potatoes. Tortillas are nice. Lots of nuts and dried fruits, and there are fresh veggies that hold up well too and add hydration, such as cucumbers and zucchini. I've made peanut chicken wraps before with canned chicken, can of mixed veggies and sauce made of PB, soy sauce packets and hot pepper flakes in tortillas. I hope to come up with some good recipes.
