I haven't tried these yet. I just found them in my Favorite Brand Name Light Cooking cookbook. They don't even look like they need to be modified. The only question I'd have is they use Fleischmann's Original Margarine. I think some use that, but I'd use Soy Garden instead.
I'm going to try these for my Christmas cookies, so will let you know how they are.
Chewy Lemon-Honey Cookies
2 cups all-purpose flour 1 1/2 tsp baking soda 1/2 c honey 1/3 c Fleischmann's Original Margarine (I'd use Soy Garden) 1/4 c granulated sugar 1 T grated lemon peel 1/4 c Egg Beaters Healthy Real Egg Product (Ha! That was already part of the recipe, didn't even have to change it! ) Lemon Glaze, optional
In small bowl, combine flour and baking soda; set aside.
In large bowl, with electric mixer at medium speed, beat honey, margarine, granulated sugar, and lemon peel until creamy. Add Egg Beaters; beat until smooth. Gradually stir in flour mixture until blended.
Drop dough by rounded teaspoonfuls, 2 inches apart, onto baking sheets lightly sprayed with non-stick spray. (Ok, that part had been lightly greased, but I switched that. ) Bake at 350 F for 7-8 minutes or until lightly browned. Remove from sheets; cool completely on wire racks. Drizzle with Lemon Glaze, if desired.
Lemon Glaze: In small bowl, combine 1 cup powdered sugar and 2 tablespoons lemon juice until smooth.
Makes 3 1/2 dozen cookies
