I think I've made every brownie recipe in the index, and the only one that I thought was appropriately gooey and brownie-ish were the black bean brownies. but, these days I am so exhausted that the whole puree/strain thing seemed like way too much work. So this is what I came up with instead. They turned out just the way I like them -- gooey enough that it leaves a pastey residue on the plate. Actually, that kind of sounds gross, doesn't it? oh well.
These are pretty sweet, so you may want to cut back on the sugar. If you do, add a bit more flour.
1/2 C flour 1/2 C cocoa powder 1 t baking powder 1/4 t salt 1 1/2 C sugar 2 T canola oil 3 egg whites 1/2 c applesauce 1 t vanilla extract
Turn oven to 350.
Sift together the first four ingredients (otherwise you will have gross cocoa/flour lumps in the end product). Dump the rest of the ingredients into the bowl and mix well. Pour into greased 8x8 pan. Bake 25-30 minutes until the center is set and a toothpick comes out slightly gooey but not raw. I think mine took around 30 minutes. If the toothpick comes out clean then you have overbaked them and they will probably taste gross and rubbery.
Calories from fat came out to 16%, so you have a bit of fat to play with (whoa, THAT sounds pretty gross, too) if you wanted to toss in some chocolate chips or nuts.
