I got a great Recipe-Chex Chicken Nuggets

Hi my name is Sandra and I am new to this message board. I bought Heather's IBS recipe book and started looking for more recipes to add to my new collection. I loved the Honey Glazed Sanck Mix and was wondering what I could do with my boxes of Chex Mix (I have a lot-I really like the snack mix!!!). The Chex website has tons of recipes that can be modified to be IBS safe and this is one I tryed last night. It came out great and my little sisters say that if I make chicken like this they would eat it every night!
Chex Chicken Nuggets 3 cups corn chex (crushed really good) 1/2 cup parmesan cheese (you could cut this out if cheese is a problem for you) 1/2 teaspoon salt 1/2 teaspoon seasoned salt 1/4 teaspoon paprika 1/8 teaspoon garlic powder 3 Tablespoons Butter (I used Smart Balance Light) 1 Tablespoon Milk (I used Vanilla Soy Milk) 1 lb. chicken cut into 1-inch pieces.
Preheat oven to 400 degrees F. Stir melted margarine and milk together in one bowl. In another bowl combine the parmesan cheese, salts, parprika, and garlic powder. Dip chicken slices in milk mixture and then roll chicken in crumb mixture. Place chicken on a non-stick cookie sheet (or just use some PAM on a regular sheet) and Bake 8 mins. Turn chicken and bake another 8 mins. Serve the chicken with any type of dipping sause. My sisters used Sweet and Sour sauce from McDonalds and I used a Honey Mustard Sauce.
I am so glad that I found this website it has made a world of difference for me! I finally am losing weight and I feel so wonderful. Thanks for all the help and all the wonderful recipes.
