Last night I came up with this quick recipe to put over my Jasmine rice. I LOVE this rice, it has a wonderful "nutty" flavor and the aroma, while it's cooking, is incredible!
1 small onion, chopped 1 TBSP olive oil ( you can use a spray to coat your pan,if you prefer. A small amount of Olive Oil does not bother me) 1 can (14 1/2 oz) of Del Monte's diced tomatoes with basil, garic & oregano... (GREAT taste!) 1 can (8 oz) Hunt's tomato sauce with roasted garlic flavor 1 small baking (Russet) potato, peeled & grated
Saute chopped onion in the olive oil until soft & transparent. Add the diced tomatoes, tomato sauce and the grated potato. The grated potato thickens the sauce a bit. Simmer, covered, for about 15 minutes or until the potato is cooked. Even though the cans of diced tomatoes and tomato sauce both have garlic flavor in them, it is NOT overpowewring at all...its a wonderful flavor. I poured some of this over my Jasmine rice and it was VERY tasty!
You can add what ever you like to this basic sauce: grated carrots, sliced mushrooms, thinly chopped celery, etc.
