GREEN POTATOES
This one is too easy and ultra tummy friendly. Very simple, delicious, low cal., VERY FILLING/satisfying, and well rich and creamy!
Ingredients:
--boiled potatoes (your choice re: variety)
--spinach
--herbs/spices of your choice (I used basil and a little dill)
--optional: onion/garlic, celery (I used garlic powder)
NOTE: NUTMEG really rocks with spinach/potatoe!!!
Note: I added a little plain rice vinegar after the fact because I like things a little sour!
Food process 1 part cooked spinach and one part boiled potatoe. Add desired herbs/spices. ENJOY.
It's great with mushrooms, by the way! I can hardly wait to do this with asparagus, swiss chard, etc.
Now, I just have to figure out which kind of potatoes taste the best!
