I love this dish also. I think it takes me about 45 min total (prep and cook time) to make these. I've never used the new potatoes though...I just take regular red potatoes and cut them up into large size chunks.
I can't figure out what you could have done wrong either. You put it in a skillet and only cover the potatoes 3/4 of the way, right? (I guess that's about 1-2 cups of water or so...I never measured it.)
