side dish for 2

I am entering a recipe contest for a side dish for 2. I came up with one tonight but made it in bigger proportions and want advice on how much 2 servings would be. This is what I did:
2 portobello caps
2 zucchini
2 bell peppers
(all small to medium)
12 olives

Dressing:
2T oil
2T balsamic vinegar
2T water
2T. chopped oregano
pepper
garlic 2 cloves

I roasted the peppers while grilling the mushrooms and zucchini and then I cut all into chunks, added olives and mixed in the dressing. The dressing could be warmed. I would put some feta on it in the contest. Anyway how much would 2 people eat? There was a little bit left and DH eats big. I was thinking 2 mushroom caps since they come 2 to a package and 1 zucchini, 1 pepper and 8 olives (of choice) and halve the dressing.
Also any name suggestions?
What about, Grilled Vegetable Salad with Warm Vinaigrette?
