Need Recipe Ideas

Hi, I just joined the boards today, but I've been lurking for weeks. I've been trying to stabilize for several weeks now and I've come a long way. My problem is . . . well, honestly I'm about to pull my hair out because I'm essentially cooking 3 or 4 different dinners every night. I have three children and with allergy constraints it's just been a nightmare. I feel like I'm eating the safe things that I can grab, but I'd like to cook a meal where we can all sit down and enjoy a similar dish that doesn't require the meltdown of my kitchen!
I'm trying to cook for: myself my daughter who is allergic to soy, wheat and eggs my daughter who is a strict vegetarian and is allergic to soy
Umm ... yeah, not so easy, huh? Quite frankly, if I look at another piece of plain chicken (which is what I end up cooking for myself 4/5 nights) I think I might gag. I've always had to sub out certain things for the allergy stuff, but now that I can not eat red meat life has become even more challenging. And, most of the recipes I see here that might have worked are stock full of SOY! Not going to happen at our house.
So, any ideas on how to make this work . . . so that we can all eat and I'm not losing my mind?
