I *think* baking soda is bicarbonate of soda. But to be honest, I use baking powder in all baking recipes (like ADBs) and it works fine!

Maple syrup is very different tasting to golden.

Sorbet...I'd guess so but don't know any recipes. You could certainly use frozen fruit.
