Thanks for the sausage info. I'll check around and see if I can find that brand. If not, I know Whole Foods has some, including store-made.
And thanks for the heads-up on the dark meat. After I read your post about squeezing the insides out of the sausages, I resurrected a dim, dark memory of doing that with turkey sausage sometime last year (Bevrs' Crockpot Spaghetti Sauce, I think). So I guess I have had turkey sausage before and tolerated it.
The recipe you referenced does sound awesome. Once I get your Sausage and Biscuits made (guess what I'm signing up to cook this week), I'll give that a try.
As for the issue of hot or sweet sausage, years ago I did consulting at a place where everyone went to a local deli for lunch. All their sandwiches were made with peppers and the only choice you got from the counterman who'd been there for a hundred years was, "Hot or sweet, babe?"
