Arrowroot biscuits (cookies)

My bf bought me a bag of arrowroot flour (without asking, just because I enjoy Newman's arrowroot alphabet cookies occasionally as a treat), so I had to find something to do with it! I found a recipe somewhere on the internet and modified it thusly:
2 tbsp vegetable oil 2 tbsp applesauce 1/2 cup sugar 2 egg whites 1/2 tsp vanilla 1 cup all purpose flour 1/2 cup arrowroot flour 1/2 teaspoon baking powder
1. Mix well oil, applesauce, and sugar. Beat in egg whites and vanilla. 2. Stir remaining ingredients in. Mix well. 3. Roll 1/8 inch thick on floured surface. Cut into 2 1/2 inch rounds. Prick with fork. (Ok, I cut the rounds, and they stuck to my counter! So I made little dough balls and flattened them slightly with a fork) Grease baking sheet. Bake in 350 degree F (175 degrees C) oven until golden, about 8 to 10 minutes. Allow a bit more baking time if rolled thicker.
Make sure you check them, because some of the thinner ones I made ended up really hard...but they are tasty and arrowroot is easy to digest, so they're happy for my tummy!
