When I wrote to you last week, I was concerned that there was an error in the Fresh Tangerine Gelato recipe from your book as it said it makes 1 quart yet called for twice that amount of liquid, and as the amount of the other ingredients seemed to fit with half the liquid called for, too. I made the recipe over the holidays and reduced the tangerine juice from 7 to 3 cups. I kept the sugar and egg whites the same as in the recipe. It filled the ice cream maker to the brim, so 3 1/2 cups would have overflowed my one-quart maker. And the results were excellent! The texture was smooth and silky, even after days of being in the freezer, i.e., it didn't become hard and crystallized. The amount of sugar was fine. My husband thought it was perfect, but I like things tarter so would reduce the sugar next time. But these tangerines were particularly juicy and sweet.
And I found the Srirachi sauce!
