I'm using the same kitchen equipment for cooking for IBS as I was when I was eating everything in sight, hehe... all that's really changed is the ingredients and the amount of fat I use for cooking. A spray of Pam works in a pan, nonstick or not. If you need a little more moisture, add a little broth.

One of my favorite cookbooks is "Almost Vegetarian" by Diana Shaw. You still have to do a little modifying of the recipes - mostly just substituting soy for dairy ingredients - but in general, the recipes are low-fat and really good. I always see copies in used-book stores, so you might even be able to pick up a copy for next to nothing.
