I just made this cake. First of all I would have about 3 oranges and 2 lemons on hand for it. It is yummy. I suppose you could put some ginger in it maybe in place of the cardamom? (Cardamom is also supposed to be good for the tummy). Anyway the tip is- I bought my first bundt pans yesterday but of course I got 9 inch and the recipe was for 10 inch. So I took some of the extra batter and made a jumbo muffin in my jumbo muffin pan! That way hubby can eat the cake before I bring it out to where we are going. I think this would work for lots of recipes if your pan is smaller than needed.
