Ideas for adapting the fat content in a delicious cookie recipe

Crunchy oatmeal chocolate chip cookies

1 C shortening
1/2 stick of butter
1 C white sugar
2 eggs
1 tsp vanilla
3 C quick oatmeal
1 1/2 C flour
1 tsp baking soda
1 tsp salt
1/2 cup chopped nuts
1/2 C shredded coconut
6 oz dark chocolate chips [ I can eat Ghirardelli semi-sweet choc bits in small amounts mixed with lots of soluble fiber]

I'll replace the 2 eggs with 4 egg whites and reduce the nuts and coconut to 1/4 C each [ I seem to be able to tolerate both of these in small amounts as long as the rest of the recipe doesn't contain too much fat].

Would it work to replace all of the shortening/butter with applesauce?
