Scones

A scone from your neighborhood coffee emporium can have as much as 25 grams of fat. Ours has just over 2 grams.
Ingredients
- - SCONES - - Cooking spray 2 3/4 cups (10 oz/300 g) oat flour or cake flour 1/2 cup (3 1/4 oz/100 g) natural cane sugar 2 teaspoons baking powder 1/4 teaspoon sea salt 2 ounces (60 g) low-fat silken tofu 1/2 cup (4 fl oz/120 ml) unsweetened applesauce 1/4 cup (2 fl oz/60 ml) fat-free egg product 1 tablespoon grated orange zest 1 teaspoon pure vanilla extract 3/4 cup (4 oz/120 g) currants - - TOPPING 1 - egg white, beaten 2 teaspoons natural cane sugar 1/4 teaspoon ground cinnamon
Preparation - Estimated cooking time: Under 30 minutes - 1 Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet lightly with cooking spray. 2 In a large bowl, whisk together flour, sugar, baking powder and salt. 3 In a food processor, combine tofu, applesauce, egg product, orange zest and vanilla. Process until smooth. Pour over dry ingredients and stir together with a fork just until moistened. Stir in currants. 4 On a floured work surface with floured hands, knead dough briefly until it comes together. Pat dough into a circle about I inch (2 cm) thick. With a biscuit cutter, cut 8 round scones. (Or, cut circle into 8 wedges.) Transfer scones to the prepared baking sheet and lightly spray with cooking spray. Brush tops with egg white. Combine sugar and cinnamon and sprinkle over scones. 5 Bake until firm to the touch, about 15 minutes.
