6 large pears 6 tbsp sugar Grated lemon rind or candied ginger 3 egg whites 1/4 cup confectioners' sugar
Pare and core pears, place in a baking dish and fill the center of each with one tablespoon sugar and a little grated lemon rind or candied ginger. Add 3-4 tbsp water to the dish and bake until tender. Cover with a meringue made with the stiffly-beaten egg whites and confectioners' sugar. Brown quickly (broil). Serves 6.
Can also be made with fresh peaches instead of pears. Yum!
