Ok, here it is. I have modified this a lot from various shepard's pie recipes over the years.
Tina's Vegan Shepardess Pie
- 1 onion, diced
- 2 cloves garlic, diced
- 1 green pepper, diced
- 2 carrots, shredded (with a cheese grator)
- 2 cans lentils
- 5 mushrooms
- 1/2 cup of vegetable broth
- 1 tbsp. thyme
- 1 tsp. marjoram
- Spike seasoning (available at health food stores)
- Salt and pepper to season
- 4 cups mashed potatoes
- 1 tsp. nutritional yeast
- Bread crumbs (for topping)
- 2 Bay leaves
Sauté onion, garlic, green pepper, and carrots until tender.
Add lentils, mushrooms and veggie broth, bay leaves and the spices to taste. Simmer until tender.
Put in a casserole dish, top with potatoes, sprinkle with nutritional yeast and breadcrumbs.
Broil on high until golden brown.
