I'm sure that this recipe or countless variations have been posted before, but I'm posting it anyway.
1 cup flour 3/4 cup sugar 1 1/2 Tbsp. cocoa 2 tsp. baking powder 1/4 tsp. salt 1/2 cup soy/rice milk 1 tsp. vanilla 1/4 cup cocoa 3/4 cup packed brown sugar 1 3/4 cup hot water
Preheat oven to 350 degrees. Spray 9" square baking pan with cooking spray. In a large bowl, combine flour, sugar, 1 1/2 Tbsp cocoa, baking powder, and salt. Beat in milk and vanilla on low speed. Spread batter in prepared pan. Combine brown sugar and 1/4 cup cocoa, and sprinkle over top of the batter. Pour hot water over top. Bake until no longer sticky to the touch, 40-45 minutes. Cool on rack 15 minutes before serving.
This makes a cake with fudgy pudding underneath... serve it with soy/rice "ice cream", and be sure to serve it warm. Ultra-low-fat, only 1-2 grams per serving. Serves 6 - if you have leftovers, heat 'em up before eating!
