CASEY :) (Another yogurt draining post)

After many MANY attempts to approximate the breakfast spread I grew up on, I think I finally did it. I made "Lebneh" (which, for those of you who don't know, is usually just made from draining plain, tart, homemade yogurt in a cheesecloth). The brand to use is Wildwood Soy Yogurt in Pleasingly Plain. It still has a little bit of an unfamiliar soy taste, but once you drizzle some olive oil on top, it's barely noticeable. I am having it on pita bread right now, and I am so happy! By the way, I didn't have a cheesecloth, so I took a big empty bowl, laid two layers of paper towels over it, and secured it with a rubberband around the whole rim. Then I spooned the soy yogurt on top, and covered it very loosely with saran wrap, and left it out until bedtime. Then I put the whole thing in the fridge. This morning I slid of the rubber band, and lifted the paper towels off the bowl, and turned them over into a dish to dump off the yogurt. Don't try to scrape the yogurt off the paper towels while it's still streched across the bowl, because you could tear the towel, and then all the yogurt falls right back into the water. Oh also, I mixed a little bit of salt -- maybe a teaspoon -- into the yogurt to help get the water out.
