So, I was getting creative in the kitchen, and thought I'd share what I came up with. I cannot guarantee the proportions, I was kind of winging it, but you usually can't go wrong with cookies. These can be made gluten-free too, but you have to pay close attention to things like the flour, baking powder, carob chips, etc. Okay, let me know if you think this is "safe", I'm still learning Coconut Carob Chip Cookies
2/3 cup applesauce ½ cup egg beaters, (or 4 egg whites) 1 tsp. vanilla extract 1 tsp. rum extract 1 tsp. Almond extract 2/3 cups turbinado sugar 1/2 cups organic brown sugar 1 1/4 cups Gluten-Free Baking Flour (or regular flour) 1 tsp. Baking Powder 1 tsp. Baking Soda ½ cup Coconut 2/3 cup Carob Chips
Preheat oven to 375F Stir together applesauce, eggs, and extracts. Stir in sugars. Sift in flour, baking soda, and baking powder. Add coconut and carob chips. Drops spoonfuls onto either greased baking sheets, or sheets lined with aluminum foil. Bake for 6 minutes, then switch racks (if double-racking) Bake an additional 4-7 minutes, or until cookies are golden brown and have some resistance to touch. Cool and enjoy!!
