I can't believe this worked, one of my vegan friends gave it to me. Crust: 8 + graham crackers 3 tsp sugar 3/4 stick margarine (I changed this to be 4 tbsp of Soy Garden, to reduce the fat)
pulverize crackers, add sugar, put in a pie pan and pour in melted soy butter. form with a spoon and bake for 8 mins at 350 degrees F
Filling: Over a double boiler 3/4 cup sugar 1/4 cup corn starch 1/3 cup unsweetened cocoa powder 1/4 tsp salt 2 cups of soy milk 3 tsp potato starch (this is an egg replacer) 4 tsp water 1 tsp vanilla.
Whisk together all but vanilla in double boiler, stirring constantly for 8 minutes. Remove from heat, add vanilla, let cool. Beat and add to cooled crust. Chill, preferably overnight.
Serves 8 (big pieces). Rock on Theresa
I'm not good at counting fat, but the soy garden has 11 g of fat per tbsp. I'm guessing there is b/t 8-10 grams of fat per piece total. The only stuff with fat (and not much) is the soy milk, graham crackers, and then the butter (which has the most).
