I don't know what could be wrong with egg whites but not yolks! Has anyone ever heard of this? I said that wasn't from celiacs right? but I didn't get a straight answer. You're right, it isn't. But consuming to may egg whites can rob your body of precious B-vitamins, and Celia cs are notoriously deficient in the B's. That's the only reason I can think of why he would be avoiding the egg whites...but this recipe doesn't have to many whites, so I don't know why the problem. As to the sugar thing, he may not have divulged the fact that he has some blood sugar resistance going on, which means he could be one step away from diabetes, which is another common condition associated with Celiac Disease. But for the most part...no, sugar shouldn't be a problem. He was very happy with the meal on the whole since most people don't cook gluten and dairy free, Well, I would HOPE SO!!! He was very lucky indeed that you went out of your way like this!!! but the sugar thing is so irritating!!! I mean there is nothing wrong with it in moderation. (he did have a little). Yet the worst part of it all was that the wife was a battle ax! and pretty snotty. I went through a lot of work planning this We know you did!!! and he was so nice and grateful and she was not. But I hope to find some inner satisfaction from it all (I hope ). You can!! Just knowing how much he appreciated it should give you some satisfaction. I suspect she was a little jealous that you made such a fabulous GF/DF meal, so had to find something to nit-pick about. Oh it was funny when he couldn't eat the cookies or sorbet and I said I had some safe soy ice cream. He got all excited and read the containers but she was like "no" and for no reason since the soy ice cream was fruit sweetened. Oh well I hope he buys some on his own. I hope so too.......after all, there are so many "No's" connected with eating GF, that is is nice when there is something great tasting that a Celiac CAN have.

You did a fabulous job Tamara!!! Oh, and for the record..if there are any of those cookies left that he couldn't eat...you can send them to me~



Mango salsa (everything is to taste since I didn't measure)
2 mangos fine dice
1/2 red pepper fine dice
1/2 small red onion fine dice
3T tequila
couple spoons vinegar of choice
1/2-1 lime juice
1t. sugar
some salt
1 mild hot pepper like serrano
1t. olive oil
plenty of chopped mint, thai basil, basil or cilantro or a combination.
Mix ingredients and let it meld for a little while and serve. It is best the same day but after a few hours. I like it served at room temperature. Yum, yum, yum, yum.... Kandee.
