I had one doctor tell me that there was nothing abnormal about having lots of diarrhoea and getting dehydrated every single day!!! Make sure your wife gets a colonoscopy to check it is IBS. I'm glad you found this site - it's helped me more than anything else. Good luck. Oh - try out the recipes on the Recipe Index. There are some great ones. Just keep it simple until she's stabilised.
