I know what you mean! I noticed on the left side of the website you linked to that there were several special diets for IBS, including Heather's Eating for IBS diet. I think that site is a collection of the theoretical diets people have developed for those with IBS.

My best guess is that if people feel hugely better from cutting wheat out of their diet, then they were suffering from a wheat intolerance. I suspect I may have a problem with wheat, and am waiting the results of a food allergy panel to find out for sure. Personally, I find it impossible to figure out what foods bother me because my symptoms are so varied and I believe I am getting a delayed reaction from certain ones.

Just know you are not alone in feeling confused...I do think it's important to stick to a diet for an extended period of time (at least 3-6 months) to know if it is really working for you.
