seriously, i wouldn't obsess too much. something like baked salmon or chicken basically "cooks itself." meatballs, lasagne can be pre-assembled, even before she arrives, so you can just "whip it out" of the freezer. heck, you can pre-prep. the lasagna and the balls of fire simultaneously while you're handling the ground meat.
i'm still with Bevrs, i.e. serve yourself, but i know you!
you could make a wicked risotto, too. how would she like a stir-fry? that way, you guys can share something!!! who says there has to be meat everynight???
you mentioned that you love polenta. go for it.
truly, i know all will be fine, food-wise. and, if worse comes to worse--order pizza.
i like khyricat's suggestion about setting up a taco/fajita bar, too.
gee, i'm helpful. don't listen to me as i'm a crappy guest and bring all my own stuff. thus, i know not very much!
