My husband the household cook has diabetes, so I'm on a modified IBS-diabetes diet right now. The totally safe things for both of us are: barley, brown rice, sweet potatoes, cooked greens, mushrooms, fish, white meat chicken, white meat turkey, and rye bread (ok, the latter in moderation!). And he's really upped his fruit consumption since his diagnosis and it doesn't affect his blood sugar much at all.
If pricking your finger gets you down, look into the testers where you can prick your arm or leg or butt. I think the phrase to look for is "alternate site". The husband guy says that he doesn't feel a thing with his tester, and it requires only a teeny amount of blood.
Oh, and walking and other exercise helps both IBS and diabetes a huge amount!
