My advice would be to really follow the diet right now. Get yourself stable for awhile...once you know your body better, you'll feel more comfortable at church, on dates, etc. Sit in an aisle seat at church!
As far as restaurants go, most places will have SOMETHING you can eat - as long as you ask for things on the side, or omit the cheese, etc. Try looking at menus online first, so you are more comfortable when you get there, and you know what you want already. Only go places that you know have something 'safe' to eat. Also - eat a lot of bread before you eat dinner! Just make sure it's just plain french bread.
I think that somewhere on this site is a list of restaurants and safe choices...maybe you could do a search for it?

Oh - and you're doing fine with the fiber, but I would definately increase your dose. Just do it gradually, go up a little every week.
